Interesting Uses
The Nintendo Labo kits make great use of the different gyroscope, IR, and accelerometer features of the Joy-Cons.
The game Mini Golf Simulator uses the wrist straps to suspend a joycon and use a swinging motion to hit a gold ball.

Another game by Miyazawa Takuhiro, Give Me Toilet Paper!, gets you to put a joycon inside a roll of toilet paper and tilt the surface it's on to roll it back and forth.
